柴焙?柴油燒?
同樣是窯烤但若龍眼木柴燒改成柴油燒呢?柴油焙的龍眼乾烘焙時間只需要2天,果肉會不夠乾,不易存放,容易發霉。不夠乾燥的柴油焙龍眼乾很容易撥成龍眼果肉,因為這樣撥起來不易卡手,所以常被製成桂圓肉,便宜出售,但這樣的龍眼乾果肉風味不夠,且外殼黑,聞起來更會有油煙味。
蕭永固說,沒想過用柴油燒,因為祖父流傳下來就是用龍眼木柴燒,他說,他要的就是保持傳統,讓大家都能吃到伴他長大的這一味。
柴焙的果肉撥開來看是深咖啡色,但柴油焙的是土黃色,僅一字之差,消費者很容易搞混,雖然有沒有帶柴火香味一吃就知道,但是照片以及香味大多數人無從比較。

What if we changed the fuel from longan firewood to diesel in the kiln? It only takes 2 days to roast longan with diesel. Diesel roasted dried longan that is not dry enough can be easily unshelled and deseeded, so it’s often sold cheaply. However, this kind of dried longans is lacking in flavor. Mr. Hsiao said," I never think about roasting with diesel, because my grandfather handed the firewood roasting method down, and my father also taught me like that."
He said that what he wants is to maintain the tradition so that everyone can enjoy the taste which accompanied him to grow up.
The dried longan roasted with firewood is dark brown, but the diesel roasted dried longan is earth yellow. There's one Word that makes all the difference. Hence, consumers are confused easily. Even though we can tell them apart by eating, most people can't do it from the photo and the scent!
